FULL SUN – HERB, Arugula Roquette – Eruca sativa, native to the Mediterranean, arugula has been a much beloved salad and soup condiment since Roman times. It was brought to the US in the 1600s by the earliest colonists. The 6-12 in. tall plants have highly serrated leaves which possess an incredibly peppery flavor. The plants prefer cooler temperatures and often wither in areas of intense summer heat. Plant in early spring as soon as the ground can be worked. Rows should be 18 in. apart. When seedlings are 2 in. high, thin, leaving 6-8 in. between plants.

Herb, Arugula Roquette

Arugula has a variety of culinary applications, but the herb is primarily used fresh and as a condiment. However, one of the more interesting culinary applications for the herb is rucolino, an Italian liqueur. Rucolino comes from the Island of Ischia in the Gulf of Naples where the Arugula leaves are used to make a sweet, peppery drink. Perhaps the Ischia Arugula is uniquely flavored or the Ischia alcohol takes to the Arugula in a tastier way, but for whatever the reason, rucolino has largely been a much beloved, but very local drink and has not spread in popularity much beyond this little island.
